Kottu Roti, in Tamil language means chopped bread. It is a Srilankan preparation of chopped chapatis, vegetables, an assortment of spices, often mixed with eggs and meat.

Often considered the Srilankan equivalent of a hamburger, this wholesome preparation is commonly present at dinner tables, and in due time has gained much popularity in major metropolises around the world, among the Srilankan diaspora.

Chicken Kottu Roti - Recipe

Ingredients Required

Ingredients for Curry

  • 3 large, whole cloves of garlic
  • 1 medium sized onion
  • 1 green chili
  • 2 inch knob of ginger
  • 1 tablespoon tomato puree
  • 8 to 10 fresh curry leaves
  • 1 chicken stock cube

Ingredients for Kottu

  • 1 medium sized onion
  • 2 tablespoon of medium spicy curry powder
  • 1 large leek, fine chopped
  • 2 small carrots, grated
  • 1 red chili
  • 1/4 portion of a cabbage
  • 6 roti or flat breads
  • 1 whole egg
  • 3 breast pieces of chicken, chopped
  • 1 garlic, sliced

Procedure of Preparation

  • Blend together onion, garlic, ginger, curry leaves, stock cube, chili and tomato puree. Make sure to blend the ingredients into a fine paste.
  • Fine slice the garlic, onion, leek, chili and cabbage.
  • Roll up the rotis, and slice them into thin strips.
  • Chop up the chicken pieces into convenient pieces.
  • Heat coconut oil in a frying pan, over a medium flame.
  • Add chicken and chopped garlic. Saute for about 2 minutes.
  • Add the veggies and stir fry for about 1 minute.
  • Stir in the beaten egg.
  • Add the sliced roti and 2 tablespoon of the paste.
  • If the consistency of the preparation is too thick, then add about 2 to 3 tablespoons of water.
  • Stir fry for another 3 to 4 minutes. Make sure that all the ingredients are completely cooked. Serve hot.
