The tortilla in Spanish means, ‘small cake’. This unique culinary ingredient finds traces its origin to Mexico. Its is a flat-bread, of a soft and delicate formation and texture. In the historical timeline, the cornflour tortilla may be said to the ancestor of the wheat tortilla, which is a common ingredient in the western food world. In fact the corn flour tortilla precedes the advent of the Europeans on American soil. Tacos and burritos are among the common preparations that one may associate with tortillas.

Chicken Tortilla Soup - Recipe

Ingredients Required

  • 2 tablespoons cooking oil
  • 1 medium sized onion fine chopped
  • 2 conserved jalapenos fine chopped
  • 4 large cloves of garlic, coarsely mashed
  • 1 liter chicken stock
  • 3 boneless, skinless chicken breast
  • 500 grams of plum tomatoes
  • 400 grams black beans soaked overnight and boiled
  • Juice of 2 lime
  • 2 teaspoon fresh ground black pepper
  • Salt as per taste
  • Fresh cilantro leaves coarsely chopped
  • 8” flour tortilla, cut into long strips and grilled
  • 1 avocado, pitted and cut into thin slices
  • 1 cup grated cheese

Procedure of Preparation

  • In a deep frying pan heat the cooking oil.
  • Add the onions and saute over a high flame, with constant stirring for about 5 minutes.
  • Add the jalapenos and crushed garlic once the onions are translucent. Cook for about 2 minutes.
  • Either blanch the tomatoes in boiling water for 3-4 minutes, or roast them over an open flame. Remove skin from tomatoes and add them to the frying pan. Add the soaked and boiled beans.
  • Add chicken stock and bring it to a boil. Reduce heat to medium and simmer.
  • Add the chicken breasts. Cook with occasional stirring for the next 30 minutes.
  • Once the chicken is cooked, remove the chicken from the soup. Shred the cooked chicken breasts, when its cool and keep them aside.
  • Add lime juice and fresh cilantro leaves to the soup.
  • For serving add shredded chicken to a bowl. Ladle soup on top. Add tortilla strips and slices of avocado. Top it all with cheese before serving.
