 Ingredients Required

 For the Cupcakes:

    • 2 cups sprite soda

    • 1 cup sugar free dark cocoa powder

    • 1/2 cup salt free white butter, cut into cubes

    • 1/2 cup brown sugar

    • 2 cups all-purpose flour

    • 1 teaspoons baking soda

    • 1 teaspoon table salt

    • 2 whole eggs

Nonstick cooking spray


 For the Frosting:

  • 1 cup salt free, white butter at room temperature

  • 4 cups of sugar, fine powdered in grinder

  • 3 tablespoons matcha powder

  • 4 tablespoons salt free buttermilk

 Procedure of Preparation

  • Preheat the over to 160C. Spray the cup cake moulds with non stick cooking spray.

  • In a cooking pan, on a medium flame add the sprite soda, dark cocoa powder and butter. Once the butter is melted - add sugar and mix thoroughly until the sugar completely melts. Allow the mix to cool down.

  • In a mixing bowl add the all purpose flour, baking soda and salt - Mix thoroughly together.

  • Break the eggs in a separate bowl and whisk gently. Add the eggs to the cooled cocoa and mix the ingredients thoroughly.

  • Add gently the flour into the cocoa mix. Beat into uniform consistency. Do not whisk the batter too much as it may impart toughness to your cup cake.

  • Slowly pour out the batter into the cupcake moulds. Bake for about 20 minutes. Transfer on a cooling rack and let the cakes cool down.

  Preparation of Matcha Frosting

  • In the mean time add the butter in a mixing bowl.

  • Add sifted powdered sugar and matcha powder to the butter. Add buttermilk.

  • Using a hand blender mix thoroughly until the frosting mix attains an uniform and smooth consistency.

  • Transfer the frosting mix into a pastry bag. Using a tipper of your choice lay out the frosting on your cup cakes.
