Nyama Na Irio – Recipe
- 300 grams of green peas
- 300 grams of sweet corn
- 800 grams of mashed potatoes
- 2 tablespoons of butter
- 5 kilograms of tenderloins, cut into even cubed
- Olive oil
- 5 tablespoons of all purpose flour
- 2 cups of meat stock
Procedure of Preparation
Mix in the potatoes along with green peas, sweet corn, butter.
Season with salt and pepper.
Fry the meat, in oil over a medium flame, until the meat is a rich brown.
Remove the meat from oil and keep aside.
Add the all purpose flour to the oil, constantly stir until a brownish roux is formed.
Add meat stock to the roux, and cook over a low flame for about 5 plus minutes.
Make sure that the roux forms no lumps.
To serve place mashed potatoes, and meat. Top with gravy
