Mulled wine is an alcoholic beverage which is made by boiling the wine in select spices and sometimes even resins. It is usually served warm and is a popular drink for the harsh winters, specially during Christmas.
The first instance of mulling and spicing of wine goes back to Rome in the 2nd century AD. With the expanse of trade and conquest of the Roman empire, the tradition of mulling wine spread to other parts of Europe to as far as the Rhine and Danube rivers. In Briton mulled wine is a popular drink for Christmas, although not much consumed during the winter.

Ingredients for Spiced Mulled Wine:
- Half bottle of red wine
- 1 large cinnamon stick
- 2 whole star anise
- 2 whole cloves
- 1 orange sliced into pieces
- 1 lemon sliced
- 50 grams brown sugar
Preparation of Mulled Spiced Wine:
Mix all the mentioned ingredient in a saucepan and put it to simmer on a medium flame for six to ten minutes. Make sure that the ingredients in the saucepan do not reach to a boil.
Subsequently you may heat the mix in a slow cooker or in a water bath over low flame. For a water bath you may heat a pot of water on low flame and heat the wine mix over the slowly warming water. In this way the essential tastes and aromas of the spices will get ingrained with the wine molecules and thus present a richer taste. Let the wine cook for about an hour.
Strain the wine and serve in glasses. While serving the mulled wine, you must serve in heat proof glasses.
This is a very convenient and effective preparation for a winter night party.The pot of water could be kept on the simmer all night, hence the mulled wine served warm throughout the party. The slow cooker serves the same purpose and keeps the wine warm all night.
