Savoury Honey Ginger Chicken

 

Ingredients Required

 

  • 500 grams boneless chicken, without skin, cut into small cubes
  • 2 inch fresh, washed, peeled and mashed into a fine pulp
  • 6-8 large cloves ofgarlic fine diced
  • 1/2 teaspooncoarsely ground pepper
  • 1/2 teaspoon ginger powder
  • 2 pods whole cardamom, coarsely crushed
  • 1/2 stick of cinnamon coarsely ground
  • 1/2 of whole star anise
  • 1/2 of whole aril of mace
  • 1 sprig of fresh coriander
  • Juice from I whole lime
  • 3tablespoon cooking oil
  • 2 mediumsized onions
  • 1/2 teaspoon fineground turmeric
  • 1 cup coconut milk
  • 1 fresh greenchilli, sliced into fine pieces
  • 2cup chicken stock
  • 2 tablespoon organic honey

 

Procedure of Preparation

Rub the chicken cubes in the ginger pulp, salt, pepper, lime juice and a drizzle of oil. Set aside for 2 hours.

In a broad and deep frying pan heat the oil over a high flame.

Once the oil is heated up throw in the chopped onions and diced garlic and pulped ginger.

When the onions begin to soften, its time for the spices. The spiced immediately soak in the oil laced with the flavors from the onions, garlic and ginger .

Cardamom, Cinnamon, Stan Anise, mace, Black Pepper. Cook the ingredients for about 4 minutes. Make sure to keep the flame medium to avoid burning of the spices.

Add the chicken and mix thoroughly. Cook for 3-4 minutes as the meat begins to turn white.

Add the coconut milk, followed by the chicken stock. Mix well and cover the pot with a lid. Cook for about 10-12 minutes.

Check the chicken with a fork. Add the green chilli and fresh coriander. Stir in the organic honey and ginger powder. Mix thoroughly and cook for another 2 minutes. The chicken should be tender and completely cooked.

Serve with steamed rice or bread of choice.
