Thandai, on the other hand is a milk shake, served chilled, prepared especially on the occasion Holi. Coarsely ground almonds, fennel seeds, rose petals, ground pepper among others, are the main ingredients which constitutes Thandai.

Thandai Phirni – Holi Special Recipe

Ingredients Required

  • 1 liter wholemilk
  • 1 cup ofalmonds, peeled and chopped
  • 1 of cupof pistachios, peeled and chopped
  • 1 cupof cashew nuts, chopped
  • 1 cupwatermelon seeds
  • 1 tablespoon ofgreen cardamom
  • 1 tablespoon offennel seeds
  • 1 tablespoonpoppy seeds
  • 1 tablespoon ofrose water
  • 1 tablespoon ofkewra
  • 100 gramsrice, soaked overnight
  • 1 tsp black pepper
  • 1/2teaspoon saffron
  • 250 grams of granulatedsugar

 Procedure of Preparation

  • Bring milk to a boil and reduce the flame to let it simmer.
  • Coarsely ground the almonds, pistachios, cashews, seeds of watermelons, green cardamom pods, fennel seeds, poppy seeds, rose water, kewra, soaked rice and black peppercorns.
  • Add the mix to the milk.
  • Further add sugar, followed by saffron. Let the preparation simmer over a low flame.
  • Remove from flame when the added ingredients are cooked, the preparation thickens in consistency, and is reduced by almost half.
  • Garnish and serve cold.
